The Best Dessert in the Summertime

Strawberry Shortcake (but not shortcake)

I have always had strawberry shortcake for dessert in the summertime; I remember it as a childhood favorite. I had always been served it as either sound cake, or angel food cake, any soft type of sponge cake. When I met my partner, he specifically requested to have them on biscuits (like the ones from the can, which isn’t a bad short-cut if you’re low on time!) and at first I was thrown off. But the biscuits and sugar coating really adds an element of crunch that I now feel was missing from my past strawberry shortcakes. Now I’m never going back!

The ingredients:

Biscuits:

2.5 Cups all purpose flour

.5 Cups of Unsalted Butter

.5 teaspoons of salt

3 teaspoons baking powder

3 teaspoons sugar

1 egg

.75 cups of whole milk

1 egg for washing

Biscuit-Dip

.5 Cups of sugar

3 tablespoons of melted butter

Whiped Cream:

1 cup heavy cream

3 tablespoons powdered sugar

1 teaspoon of vanilla

Strawberries

As many as you want!

A pinch of sugar

What I like to start next are the biscuits. First, make sure your butter is cold, cold (I usually stick mine in the freezer for a few minutes so that it doesn’t start to melt the moment I begin to cut it into cubes.

While the biscuits are cooking is when I will begin the sipped cream.

1. Cut up your strawberries, sprinkle with sugar. Cover and place in fridge.

2. Cut your butter into centimeter sized cubes. Add your flour to a medium-sized bowl and add your cubed butter. Mix with your hands until incorporated, preheat your oven to 350◦

3. Add sugar, baking powder and salt, continue to combine with your hands.

4. Add egg into the center and milk. Mix well.

5. Once the dough has formed, and all dry and wet parts are well incorporated, take the dough out onto a floured surface.

6. Using a floured rolling pin, roll the dough out into a rectangular or square shape. Then fold the dough over onto itself, creating two layers. Do this at least 5 times, this is what creates the amazing flakey layers in your biscuit. Roll the dough out one last time and then cut into circles.

7. Whisk the leftover egg, a brush over the top of the biscuits.

8. Add biscuits to the oven, bake for 15 minutes, until golden brown.

9. Top 1 or 2 biscuits with the strawberries and whipped cream, enjoy!
